As I start to build these into a range you'll find, like a songwriter to a lyric, they've all come from somewhere. As my passion for food began when I was very young and wholly down to what I grew up with, what's in the garden and who did all of the cooking it's easy to draw from memories for inspiration. As fragile as a bubble, by strengthening their existence into a recipe or in our art, they're no longer catching dust in a box at the back of my mind. They're being shared with you.
We had many pokapoka on the farm, guyfawkes, clearing debris or scrub so I can't recall which one triggered the obssession between my sister and I with scorching these little bouncy puff balls. For me it was seeing the mallow catch a light. I am a big fan of the sparkler!! Or flames, aye Colleen!! She caught me playing with matches in her bedroom one afternoon. So here we have the Toasted Marshmallow. An airy, spongy texture that is incredibly easy to scoop!!
And like most kids growing up in rural NZ after school we had chores. I think I mentioned it previously, one of mine was feeding the chooks? That was sometimes an ordeal! I could be found beneath the fruit trees. Oranges, mandarins, tangelos we had a bit of everything. Without much more fluff I introduce our Dark Choc & Orange. A classic pairing of rich dark chocolate with a refreshing burst of orange. An oldie but a goodie!!
